Sweet potatoes are sooooo good, and because they taste so yummy I do have a little addiction to them at the moment. One of my favourite meals is steak, sweet potato fries and greens (either salad or veggies). We don’t have this very often but when we do I salivate with every mouthful and am completely devastated when my plate is empty.
100 grams of sweet potato contains 1.6 g protein, 0.1 g total fats and 20.1 g carbohydrate. This delicious, golden and sweet vegetable is packed full of vitamin A, C, K choline, folate, calcium, magnasium, phosphorus, potassium, sodium and selenium; it is completely versatile with many creations made possible when you let your imagination run away with you.
I have used it in mash, as lasagne ‘sheets’, whole baked with beans and cheese on top, fries, as toast, roasted in the oven, in brownies, in sweet and savoury muffins…the list goes on…
